First served to our membership and guests Wednesday October 5, 2005, this marvel was prepared at what was quoted 25% heat ( spicy ) power.  With our stomachs full, and our glasses empty, the Brethren of Redwood proclaimed it a success!  What seemed like 30L of food cooked in a crock pot was quickly hovered and devoured by the masses.

 

Ingredients:
 
2 Chicken breasts - slice & dice
1 Lean ring of ham sausage - Sliced & diced
2 loops (4 sticks) of lean pepperoni - Sliced & diced
1 bag of medium shrimp
1/2 bag of scallops (optional)
1 large onion - sliced & diced
1 red pepper - sliced & diced
1 yellow pepper - sliced & diced
2 green peppers - sliced & diced
1/3 bag of fresh white mushrooms - sliced & diced
1 10 oz. can of tomato juice
1 28 oz. can of tomato sauce
3 cups of Delta rice or Penne Noodles
1 cup of Pace Medium salsa
1/8 tsp of secret sauce (Dave's Insanity Sauce)
 
Prep and cooking
 
1. Cook the rice as directed - 13 minutes - let sit for 5 minutes (+/-)
2. Slice & dice - place ingredients into prep. bowls
3. In a large Wok, preheat 1 - 1.5 oz olive oil, add secret sauce, then onions, soon followed by chicken.
4. Add all other veggies, meats and then tomato juice & tomato sauce. Begin cooking on high heat , then bring temp down and allow for a low boil for 20 minutes. Continue to stir and mix throughout this time. Add salsa and continue mixing. Turn down the heat to low and cook for 40 minutes....
 
If this to be served on Noodles your job is almost complete. If this is to be served with rice, the suggestion is to mix the rice into the mixture and allow this to sit for about another 30 minutes.... or placed into a large slow cooker to be reheated later.
 
Serves about 25 average servings
